Ed’s Soup: Minestrone

To make: 12 cups water, 1 lb (450g) chopped ham or Italian sausage, 1 large can (796ml) diced tomatoes, and grated parmesan cheese (optional). Place beans in boiling water. Simmer for 90 minutes or until beans are tender. Add ham/sausage, Minestrone Soup Mix, diced tomatoes and more water if needed. Simmer for 60 minutes or until vegetables are tender.

To serve, sprinkle with cheese (optional).

Serves 10-12.
